Ingredients
  1. 6 cups, chopped, Kale, raw
  2. 1 cup, Quinoa
  3. 0.50 cup, Grapes - Raw
  4. 0.50 cup, Nuts, almonds, blanched
  5. 2 tablespoon, olive oil
  6. 0.25 cup, Cheese, parmesan, grated
Instructions
  1. Prepare quinoa according to package directions.
  2. Toss together all ingredients and enjoy!
Notes
  1. This salad is delicious warm. Toss the quinoa and kale together in a skillet over low/medium heat and then toss in the remaining ingredients. The warmth of the kale and quinoa loosen the olive oil, gently melt the parmesan, and helps the grapes release their liquid into the salad. Either way, warm or cold, it is delicious!
