GNG:Sandwich Thin Tuna Melt

  1. 2 whole grain sandwich thins ( 4 halves)
  2. 1-4.5 oz can tuna
  3. 2 T minced celery
  4. 1 T reduced fat mayo
  5. 2 tsp olive oil
  6. 1 T lemon juice
  7. lemon pepper to taste
  8. 4 tomato slices
  9. 2 oz. shredded cheddar or swiss
  1. Heat the oven to 350*
  2. In a small bowl, break up the tuna into flakes and add the celery, mayo, olive oil and lemon juice, mix well. Add the lemon pepper to taste.
  3. Place each sandwich thin half on a small baking sheet and evenly spoon the tuna onto each half. Add the tomato slices on each half and top evenly with the cheese of your choice. Bake for about 8 minutes or until the cheese is bubbling and beginning to brown.
