GNG: Apricot Pistachio Trail Mix

- 1 cup unsalted pistachios
- 1 cup rolled oats
- 2 T wheat germ
- 1 T vegetable oil
- 2 T honey
- sprinkle of kosher salt
- 1 cup dried apricots
- 1/4 cup dried cranberries
- Preheat the oven to 275°
- In a medium bowl toss together the pistachios, oats, wheat germ, oil and honey. Spread on a baking sheet and sprinkle with a very small amount of kosher salt.
- Bake for 20 minutes, stirring once.
- Remove from oven and let cool completely, add the dried fruit and store in an airtight container.
