  1. 3 cucumbers, small diced
  2. 2 tomatoes, small diced
  3. 2 tbsp. extra virgin olive oil
  4. 2 cups feta cheese, crumbled
  5. 1/3 cup apple cider vinegar
  6. 1 red onion, small diced
  7. 1/2 tbsp. Italian seasoning
  8. 1 tsp.oregano
  9. 1/2 tsp. garlic, minced
  10. 1 tsp. red pepper flakes
  11. Salt and Pepper to taste
  1. In a 2 qt. Pareto Stone stockpot add all diced vegetables and feta.
  2. In a separate mixing bowl, add oil, vinegar, garlic and spices.
  3. Using a wise, stir dressing mixture until well incorporated and pour over vegetable mixture.
  4. Cover stockpot with lid and let chill for an hour and a half.
  5. Every 30 minutes, give stockpot a good shake while securing lid tightly in order to coat salad ingredients and assure they are well marinated;
  6. Season with salt and pepper to taste, serve.
